Why Moisture, Particle Size and Viscosity Matter in Bulk Purchasing
Moisture changes the comparison basis
Water content affects the quantity of dry solids delivered and can influence storage and handling. If the purchase price is expressed per kilogram as received, dry-solids cost is price divided by the dry-solids fraction. Use measured, comparable moisture results and consistent units when making that calculation.
This is only one part of value. Lower moisture does not automatically mean better application performance, and purchasing solely on dry-solids cost can ignore yield, flavour or processing losses.
Particle size is a distribution
A mesh statement or average size can hide fines and oversized particles that matter to feeding and hydration. Check the measurement method and the distribution relevant to the process. Finer is not always better: fines can increase dust or cohesion, while coarse particles may hydrate differently or segregate.
Test the powder in the actual hopper, feeder or blend. Record delivery variation and reconstitution rather than assuming a sieve result alone predicts industrial handling.
Viscosity needs its test conditions
A viscosity number has meaning only with concentration, temperature, preparation, instrument conditions and timing. Peak viscosity, hot-hold viscosity and cooled viscosity describe different points in the process. Values from different methods should not be treated as interchangeable.
For the application, compare the complete history of mixing, heating, shear and holding. A high peak can be attractive on paper while offering inadequate stability at the point where the factory needs it.
Read the three together
Normalize the comparison basis, then connect particle behaviour and functional response to the customer's process. Keep other variables controlled while investigating a change. More water uptake caused by a different solids basis should not be confused with a better ingredient.
Agree incoming limits and an application check for the characteristics that matter. Record several lots before setting overly narrow limits that the test method itself cannot reliably distinguish.
Three-parameter purchasing check
| Parameter | Method detail | Application link |
|---|---|---|
| Moisture | Method, basis and representative sample | Dry solids delivered and storage behaviour |
| Particle size | Distribution, sieve or measurement method | Dosing, segregation and hydration |
| Viscosity | Concentration, heat, shear and measurement point | Flow and texture at the point of use |
| Combined trial | Same recipe basis and preparation | Accepted output and process variability |
